Coover Cattle Co. Donation

The Labette Community College (LCC) Foundation extends heartfelt gratitude to Bryan Coover and James Coover of Coover Cattle Co. for their recent in-kind donation of 300 pounds of ground beef to the LCC Student Pantry. The donation will provide students with a reliable, nutritious protein source and support those experiencing food insecurity.

The LCC Student Pantry was founded to meet the nutritional needs of students who may be facing food insecurity, and all enrolled students are eligible to receive up to 10 items per week. This generous contribution of ground beef is a significant addition, helping the college to offer healthier meal options and support students in their academic journeys.

“Many of our students are living away from home for the first time and are still learning to manage grocery budgets,” said Regina Decker, LCC Case Manager and Director of the Food Pantry. “Others, like our health science students, balance rigorous coursework, family responsibilities, and clinical hours. Thanks to donations like these, the pantry is making a real difference—one student recently shared that it was the reason they could meet their weekly food needs.”

With over 80% of LCC students qualifying as low-income, the challenges of food insecurity are very real. Research consistently shows that students who face food insecurity are more likely to struggle academically compared to their peers. With help from community partners like Coover Cattle Co., the LCC Student Pantry is bridging that gap, empowering students to focus on their education and work towards a successful future.

“On behalf of the Board, faculty, staff, and students, we express our sincere appreciation for this impactful gift,” said Lindi Forbes, Executive Director of the LCC Foundation. “Supporting our food pantry helps our students realize their full potential by removing a significant barrier to their success.”
